1. Chili Party Sausage
You will need:
12 ounce bottle chili sauce
½ cup seedless grape jelly
1 pack pre-cooked dinner sausage of your choice
A set of toothpicks
In a pot, pour in the chili sauce then mix the grape jelly over medium heat. Stir the sauce very well. Drain the pre-cooked sausages. You can either slice each one to make two if necessary. Add the sausage to the chili sauce and simmer for 5 to 8 minutes. Serve the chili sausage buffet style with a box of toothpicks so guests could simply poke away.
2. Creamy Pineapple Sausage
You will need:
2 pounds smoked sausage links
8 ounces Catalina salad dressing
8 ounces Russian salad dressing
½ cup packed brown sugar
½ cup pineapple juice
Sliced green onions, optional
Start by cutting the sausages diagonally into ½ inch slices. Add the sliced sausage in a skillet then cook over medium heat until you get a nice golden brown. Once browned, transfer the sausages to a slow cooker and remove the drippings.
Add the dressing, brown sugar and the juice to a skillet. Cook over medium-low heat until the sugar has dissolved. Now add the sausages and slow cook for 1 to 2 hours. Garnish with sliced green onions before serving. TIP: You can use French salad dressing in place for one or both dressings.
3. Sausage Pizza Rolls
You will need:
2 tablespoons olive oil
1/2 small onion, diced
1 teaspoon dried oregano
1 clove garlic, minced
One 15-ounce can tomato puree
12 pieces fresh basil leaves
Half a teaspoon chili flakes (or more according to desired spiciness)
Freshly ground black pepper
12 ounces Italian sausage, sliced into 1/4-inch rounds
2 tablespoons grated Parmesan
1 pound frozen pizza dough, thawed and at room temperature
2 cups Italian blend shredded cheese
Start by preheating the oven to 425 degrees F. and line a rimmed baking sheet with parchment paper.
In a saucepan, heat about a tablespoon of olive oil then add the onions and ½ teaspoon oregano and 1 teaspoon salt. Stir occasionally until soft. Add the garlic until fragrant. Pour in the tomato puree, 1/4 cup water, 5 torn basil leaves and the red pepper flakes. Simmer the sauce to a boil until thick. Season with salt and pepper then set aside.
In another skillet, heat a tablespoon of olive oil then fry the sausages until browned. Transfer to a paper towel lined plate. In a small bowl, mix the parmesan cheese with ½ oregano.
Divide the pizza dough into 8 equal portions. Flatten each into 4-inch square using a rolling pin. Spread a tablespoon of sauce on the flattened dough, add the Italian cheese blend, a small piece of sausage and 1 basil leaf. Wrap the filling with the dough and pinch the edges to seal. Place the pizza roll seam-side down and repeat. Brush the roll with olive oil and sprinkle grated parmesan and oregano blend before baking for 20 to 25 minutes. The remaining sauce will serve as the dip. Serve immediately.
