1 whole carrot
2 ripe plum tomatoes
2 celery stalks
1 medium-sized head of cabbage
¼ red or white onion
½ clove of garlic
¼ taco seasoning or your favorite spices
Sea salt to taste
1 can of coconut milk
½ cup of hot water

Instructions

Add all ingredients in your Vitamix blender and set it on high for 90 seconds. Stop when the mixture has taken on a smooth consistency. Add sea salt to taste. Adjust the seasoning accordingly.

Creamy Green Spinach Soup

You will need:

3 cups vegetable broth
3 medium-sized avocados
1 large bell pepper
¼ organic spinach
2 lemons
Sea salt and pepper

Instructions

In your Vitamix blender, add all ingredients. Blend for 90 seconds on the highest setting. Stop until the mixture achieved a smooth, liquid consistency. Add sea salt and pepper to taste, adjust the seasoning accordingly. Tip: You could also use water as a zero-calorie substitute to vegetable broth.

Hearty Taco Soup

You will need:

1 can of vegetable broth
2 pieces Roma tomatoes
1 small celery stalk
1 medium sized carrot
2 tablespoon of Taco seasoning
½ can of sweet corn
½ can of kidney beans
A handful of tortilla chips (or any healthier, low-calorie alternative)

Instructions

Add all ingredients in your Vitamix blender except the corn, the beans and the chips. Blend the ingredients together on the highest setting for 90 seconds. Stop until the mixture has achieved a smooth, liquid-y consistency. After blending, place on a serving bowl. Add corn and beans to the mix and then garnish with lightly crushed chips. Serve immediately.

Classic Beet Soup

You will need:

2 cups of vegetable broth
1 medium sized beet root
1 medium sized carrot
1 spring onion
sea salt to taste

Instructions

This is a fast, incredibly simple raw soup recipe to try! Mix the vegetables together with the vegetable broth into your Vitamix blender. Set it on high and blend for 90 seconds. Adjust the seasonings accordingly.

Tip: you could add strawberries to sweeten the soup and enhance its crimson color. Do not remove the beetroot’s leaves and blend it together with the rest of the ingredients. Beetroot leaves are very dense in vitamins and minerals! Finally, to cut back on the calories even more, you can substitute plain water for the vegetable broth.
