5 Gluten-Free Sweet Treats for Dessert Lovers

Staying away from gluten doesn’t mean depriving yourself of yummy desserts! Finish off a meal on a sweet note by indulging on these healthy, gluten-free desserts:

1. Chocolate Cups

You will need:

2/3 cup granulated sugar
2 tablespoons cornstarch
1/8 teaspoon kosher salt
3 cups whole milk
4 large egg yolks
½ teaspoon pure vanilla extract
6 ounces bittersweet chocolate, roughly chopped
½ teaspoon unsweetened cocoa powder

Directions

Combine the sugar, salt, and cornstarch in a saucepan. Add about 1/3 cup of milk into the mix, stirring constantly to create a smooth paste. Add the egg yolks and the remaining milk and whisk. Simmer the mixture over medium-low heat for 12 to 15 minutes, stirring constantly to thicken. Do not allow the mixture to boil. Remove from the heat and stir in the chocolate and vanilla. Finally, pour the mixture on cupcake papers and sprinkle with cocoa powder. Leave to cool and serve!

2. Classic Rice Pudding

You will need:

2 cups instant rice
½ cup vanilla ice cream
1 teaspoon ground cinnamon

Directions

Cook the rice according to the packaging. Once cooked, stir in the ½ teaspoon of the cinnamon and ice cream very well. Scoop a dollop or two of the rice pudding on small bowls, sprinkle with cinnamon and chill. Serve immediately.

3. Baked Apples

You will need:

4 large apples
¾ cup maple syrup
½ cup walnut pieces
¼ cup golden raisins
2 tablespoons unsalted butter, cut into pieces

Directions

Start by preheating the oven to 400° Fahrenheit. With a paring knife, remove the apple cores and trim the fruit to about ½ at the bottom so the fruit sits flatly in a pan. Place the apples in an ovenproof skillet or baking dish.

Fill the apples with walnuts and raisins, drizzle them with syrup, and dot the apples with butter. Stick to the oven for about 40 to 50 minutes or until tender. If you are using a baking dish, pour the liquid from the baked apples into a skillet and reduce over medium heat. Spoon the sauce over the warm apples, top with a scoop of ice cream and serve immediately!

4. Raspberry Sorbet with Meringues

You will need:

1 cup heavy cream
2 tablespoons confectioners’ sugar
16 pieces of small meringue cookies
2 pints raspberry sorbet

Directions

In a medium bowl, add the cream and sugar and start whipping until you achieve soft peaks. Set aside. With your hands, gently break the cookies into pieces over a medium bowl. Scoop the raspberry sorbet into individual dishes, scoop the whipped cream over the sorbet and finish up by sprinkling with crumbed meringue cookies. Serve immediately and enjoy!

5. Zesty Lemon and Almond Macaroons

You will need:

1 package of sweetened shredded coconut
1 cup sliced almonds
¾ cup sugar
1 teaspoon grated lemon zest
¼ teaspoon kosher salt
4 large egg whites

Directions

Start by preheating the oven to 325° Fahrenheit. Combine the shredded coconut, almonds, sugar, salt, and lemon zest in a large bowl and mix well. Add the egg whites and mix. Drop a small amount (about 2 tablespoons) of the mixture on a parchment lined baking sheet, spacing each ball 1 ½ inches apart. Stick in the oven and bake for 20 to 25 minutes or until the edges are browned. Take the macaroons out of the oven and leave to cool on a wire rack. Serve immediately and store the rest in an airtight container at room temperature. The macaroons should keep for up to 7 days.
