Lightly roast the fennel seeds on a hot pan for 20 seconds or until you achieved a sweet, toasty aroma. Boil the water. Just as the water starts bubbling, add the toasted fennel seeds. Turn off the heat and cover the infusion. Leave the infusion to steep overnight. Once the infusion is steeped, transfer the liquid to a pitcher and it’s ready to drink!
