Sparkling Julep
You will need:
1 sugar cube
¾ cup champagne or sparkling wine
1 sprig fresh mint
Directions
Place the sugar cube in a flute and pour the champagne. Crush several mint leaves and garnish with a sprig of mint.
Aperitif
You will need:
1 oz. Gin
1 oz. Aperol or Campari
1 oz. dry vermouth
3 oz. Prosecco or champagne
Slivers of orange peel for garnish
Directions
In a flute glass, combine the gin, Aperol and vermouth and stir very well. Add the Prosecco or the champagne and then garnish with slivers of orange peel.
Juniper Champagne Cocktail
You will need:
½ cup sugar
¼ cup juniper berries, crushed
1 bottle Prosecco or champagne
Unsprayed pine sprigs for garnish
Directions:
In a pot, combine the sugar, water and juniper berries and simmer. Continue stirring until the sugar is dissolved, remove from heat and set aside to cool. Strain the liquid using a mesh sieve and discard the solids. Stick the juniper syrup in the fridge for an hour or two.

To make the cocktail, combine 3 tablespoons of juniper syrup with ½ cup of champagne in a flute glass. Garnish with a pine sprig and serve immediately.
Cranberry Champagne Cocktail
You will need:
2 cups fresh or thawed frozen cranberries
1 cup sugar
1 cup vodka
Two 750ml bottles of champagne
Directions
Start by making a cranberry puree by mixing the berries with sugar and vodka in a blender until smooth. Strain the mixture and chill in the fridge. To assemble the drink, add 3 tablespoons of the cranberry mixture to a flute then pour ½ cup champagne. To create a pretty ombre effect, tilt the flute as you pour the champagne gently from one side. Serve immediately.
Pomegranate Champagne Cocktail
You will need:
1 bottle Prosecco or other sparkling wine
4 cup pomegranate juice
Lime slices for garnish
Directions
In a large pitcher, combine the champagne and the juice and stir until blended well. Pour the liquid in every flute glass and garnish with a slice of lime. Serve immediately and enjoy!
Fizzy Sorbet
You will need:
Assorted sorbets
A bottle of chilled champagne or sparkling wine
Directions
Get six martinis or wine glasses and stick them in the fridge for 30 minutes to an hour. The serving glass has to be very cold! Fill the chilled glasses with 4 to 5 mini scoops of assorted sorbets and top each with sparkling wine or champagne. Serve immediately.
Classic Champagne Cocktail
You will need:
1 cube sugar
Angostura bitters
Sparkling wine or champagne
Slivers of lemon peels
Directions
In a champagne glass, put the sugar cube and sprinkle with Angostura bitters. Gently pour the champagne to fill the glass and garnish a lemon peel or two. Serve immediately!
Cherry-Orange Fizz
You will need:
3 seedless oranges
Orange peels
½ cup red cherries
½ cup sweet vermouth
¼ c. blended Scotch
1 bottle champagne or other dry sparkling wine
Directions
In a blender, add the peeled orange and cherries and blend to make a purée. Strain the juice into a pitcher and pour the vermouth and Scotch. Stir the mixture very well and set aside. To divide the mixture, get 8 glasses and pour about 1/3 cup of champagne mix in each. Garnish with orange peels and serve immediately.
