South-Style Breakfast Burrito

4 high-fiber whole grain sandwich wraps
4 egg whites
2 eggs
1 cup unsalted canned black beans, drained and rinsed
½ green bell pepper, finely chopped
½ red onion, finely chopped
2 tablespoons pickled jalapeño, chopped
1 cup low-fat cheddar cheese, shredded
3 tablespoon spicy salsa

Instructions:

Start by popping the wraps in the toaster and cook for 5 to 7 minutes, then set aside. Get a clean bowl and mix the egg whites, eggs, and beans. Whisk briskly. Heat a skillet over medium fire then coat the surface with cooking spray. Add the egg mixture and cook for one minute. Stir the egg mixture occasionally to distribute the heat evenly. Finally, sprinkle green and red bell peppers, onion, pickled jalapeno and cheese as you lower the heat. Cook until the cheese melts.

To assemble the burrito, place about a quarter of the egg mixture into each wrap. Finish up the filling with salsa then fold the wrap. Secure the fold with aluminum foil and serve immediately.

Choco Wafer Smoothie

¾ cup fat-free milk
1 ripe banana
4 ice cubes
3 chocolate cookie wafers
½ tablespoon ground flaxseed
2 teaspoon sugar
½ teaspoon vanilla extract

Instructions:

In a blender, add the milk, ice cubes, banana, chocolate wafers, flaxseed, sugar, and vanilla extract. Blend well then pulse for two minutes to achieve a thick, smooth consistency. Get a tall glass and pour the mixture. Garnish with banana slices and ground up cookie wafer. Serve and enjoy!

Blackberry-Thyme Salad Tartine

1-quart fresh blackberries, crushed
1 tablespoon fresh thyme leaves
2 tablespoon agave nectar
1 tablespoon lemon juice
24 ounces plain, low-fat yogurt
1 sourdough baguette
2 tablespoon butter
a pinch of kosher salt

Instructions:

In a clean bowl, mix the crushed blackberries with thyme, sugar, and lemon juice. Season with a pinch of kosher salt. Slice the sourdough baguette lengthwise then cut into four small pieces. With a bread knife, spread a thin layer of butter on the baguette. With a spoon, spread another layer of the blackberry mixture on the baguette. Finish up with a layer of yogurt. Serve and enjoy!

White Bean and Tuna Crostino

1 can tuna in olive oil, drained and flaked
1 can white beans, drained and rinsed
2 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
2 ounces Fontina cheese coarsely grated
¼ teaspoon kosher salt
Ground black pepper to taste
4 slices whole-wheat country bread

Instructions:

Start by preheating the broiler with the rack on the highest position. In a clean bowl, incorporate the tuna with the beans, lemon juice, parsley, and salt. Season with black pepper.

On a broiler-proof baking sheet, arrange 4 slices of country bread. Add a scoop of tuna salad evenly on each bread slice. Sprinkle coarsely grated Fontina cheese then pop to the broiler. Cook for 2 to 3 minutes until golden. Serve and enjoy!
