Got Sweet Tooth? Try These Delicious Breakfast Recipes

Why wait at the end of a meal for desserts when you can have a sweet treat first thing in the morning? If you love sweets for breakfast, try whipping up these yummy recipes:

1. Blueberry Muffin Energy Balls

You will need:

1 cup unsalted roasted cashews
1 cup roasted almonds
1 cup date
1 cup dried blueberries
1 ½ teaspoon vanilla extract
1 tablespoon lemon zest
½ lemon, juiced
¼ teaspoon sea salt

Instructions

In a food processor, combine all ingredients and blend until you get a thick, dough-like mixture. With clean hands, roll a small portion into golf ball-sized piece. Pop the muffin balls in the fridge until firm. Serve and enjoy!

2. Yogurt and Pineapple Bowl

You will need:

1 teaspoon coconut oil
1 teaspoon brown sugar
2 cups fresh pineapple chunks
½ teaspoon ground cinnamon
2 cups plain, non-fat Greek yogurt
2 tablespoon raw honey
4 tablespoon coconut flakes

Instruction:

Start by heating the coconut oil on a skillet. Add the brown sugar and simmer until melted into a syrup. Then, add the pineapple chunks and cinnamon. Simmer until the pineapples are soft and semi-translucent. Remove from the heat and set aside.

Get four clean bowls or cup and divide the plain Greek yogurt. Divide the pineapple mixture among the serving bowl. Sprinkle with coconut flakes and a dash of raw honey. Serve and enjoy!

3. Peanut Butter and Jelly Overnight Oats

You will need:

1 medium sized ripe banana
1 cup almond milk
4 tablespoon peanut butter
1 ¼ cup rolled oats
1/8 cup chia seeds
½ cup 100% pure Concord grape juice

Instruction:

In a stand mixer, whip the almond milk and banana until smooth. Season lightly with salt. Combine the oats and whip for 30 seconds. Transfer the mixture in 4 clean jars then pop in the fridge. Chill overnight.

Whisk chia seeds into the Concord grape juice and chill in the fridge to set. In the morning, pop open each jar of peanut butter mixture and top it with chilled chia seeds in Concord grape juice. Serve and enjoy!

4. Triple Berry French Toast

French Toast

3 egg whites
4 slices stale whole-wheat bread
¼ teaspoon vanilla extract
A pinch of cinnamon
½ cup non-fat milk

Syrup

2 cups frozen berries
1/3 cup distilled or mineral water
3 teaspoon maple syrup
½ teaspoon cinnamon
½ teaspoon vanilla extract

Instructions

In a large bowl, mix the milk, egg whites, vanilla, and cinnamon. Pour the mixture on a plate then coat every slice of bread. Let the mixture soak the bread really well on both sides.

Heat a skillet over medium heat and add a spray of cooking oil. Add the toast then cook until golden brown before flipping to the other side. After all slices of bread are done, set aside.

In a separate saucepan, mix all the syrup ingredients and simmer for at least 5 minutes to soften the berries. Mash the berries then bring to a boil. Reduce the liquid to desired thickness. Scoop the syrup on top of the French toast and serve.
